We can’t imagine summers without mangoes. Can you? From luscious Alphonso to juicy Kesar, the king of fruit inspires a number of delectable creations. And to jazz things up, we have come across a yummy recipe. Presenting, mango masala rice. The steamed rice is cooked in a grated, tangy raw mango and wholesome spices.

Ingredients Required:
- Mustard seeds – 1 tablespoon
- Fenugreek seeds – 1 tablespoon
- Cumin seeds (Jeera) – 1 tablespoon
- Coriander seeds – 1 tablespoon
- Red chillies – 8 to 10
- Chana dal – 1 tablespoon
- Urad dal – 1 tablespoon
- Mustard seeds – 1 tablespoon
- Curry leaves (Kadi pata)
- 1 Grated raw mango
- Boiled rice
- Salt to taste
- Coriander leaves
Method of preparation:
- Take a pan and add mustard seeds, cumin seeds, fenugreek seeds, coriander seeds, and 8–10 red chillies to it.
- Dry roast and crush them in a blender into a fine powder.
- Pour pure ghee or refined oil into a cauldron, and add 1 tbsp Chana dal, 1 tbsp Urad dal, mustard seeds, and curry leaves (Kadi pata) to it.
- Combine the ingredients thoroughly before adding the powder.
- Now, add grated raw mango and boiled rice into it.
- Stir fry until all the ingredients mix well.
- Temper with Desi ghee and add salt to taste.
- Garnish the dish with mango slices and stir thoroughly for flavour.

Meanwhile, raw mangoes contain more Vitamin C than the sweet ripe mangoes and work wonders for all your tummy troubles. Vitamin C helps in the absorption of iron and hence, raw mangoes are recommended to people suffering from anaemia. Raw mangoes also contain pectin, found in other fruits like apples and berries, which makes it good for your heart.
