For instance, a healthy bowl of gnocchi. These are basically Italian dumplings, traditionally made with flour, eggs and potatoes, boiled in water and then tossed with a myriad of sauces. While there are numerous ways to cook gnocchi, it tastes best when served with tomatoes or a pesto sauce. For an aromatic flavour, you can even consider sauteing it with butter, garlic and some herbs. You can also up the nutritional quotient of the meal by replacing the boiled potatoes with seasonal carrots. This way you can incorporate the boring vegetables into your platter and make them taste delicious.

If you have little to absolutely no idea how to prepare gnocchi, let’s take a look at nutritionist Pooja Makhija’s quick and yummy recipe. The health expert shared a video on Instagram, showcasing a step-by-step procedure of cooking carrot gnocchi. It is a healthy dish, loaded with essential nutrients like Vitamin C, Calcium, Iron, Potassium and Vitamin B6 among others. Not to mention the health benefits of carrots, which are good for the eyes, lowering cholesterol, aiding weight loss and lowering the chances of cataracts.

Posting the recipe, she wrote, “Such a tasty way to ensure your family eats veggies”.

Here’s the recipe-

Chop, blanch (or better pressure cook) and mash the carrots.

Add grated garlic, chili flakes, oregano, salt and pepper, wheat or millet flour and cornflour.

Mix all the ingredients together and knead the dough.

Roll out the dough into pipes and cut them into small squares.

Now, take a fork and roll them over to create the gnocchi pattern.

In a separate pan, boil some water along with salt and fried herbs to enhance the taste. Steam the rolled gnocchi for 7-10 minutes in it.

Take them out. Throw in the boiled gnocchi into a sauce of your choice and voila!

You can also make gnocchi with mushrooms in Alfred Sauce, or you can also add them to your soups, and salads. To make it all the more healthy and nutritious, consider giving it a green treatment with peas, asparagus, spinach, broccoli, tomatoes or squash.
