KOZHIKODE: Carrot payasam, one of the 12 lipsmacking varieties of payasam available at the KTDC Payasam mela in the city is sure to make you crave for more. The two week-long mela is being held at the Malabar Mansion.Payasam mela, which is organised in 25 KTDC centres across the state, serves almost 700 litres of the payasam a day.This year, expert payasam makers from different parts of the state have been brought to prepare the delicacy for the people of the city. “We had a great turnover in sales last year and we expect the same this year too,” said Shaji K K, manager at the KTDC Malabar Mansion. Kozhikode ranked second in sales last year with the capital city,Thiruvanathapuram, gaining the first position. “We aim to secure first position this year by bringing in variety in the mela along with quality,” he added.This year, the mela will showcase pumpkin, pineapple and carrot payasam as variety dishes. A slightly changed recipe of the Ambalapuzha palpayasam is also a highlight at the mela as the original recipe has been patented.The payasam at the mela is prepared by K Babu and five other top chefs who have been working in the KTDC hotels. Babu has 23 years of experience in making payasam. He learned the preparation from Guruvayur temple years ago.“The uniqueness of the preparation is that there are no added preservatives in any of these payasams. They are completely natural and healthy,” said Babu. “I enjoy the whole six hour-long process of makingthe payasam,” he added with a smile. Palada pradhman, parippu, pazham, paal, pineapple, pumkin, carrot, rice, ambalapuzha are the main varieties of the payasam available. One litre of payasam will cost `170 and a half litre will cost `90 and a glass will cost `20 at the mela.
