Blackberry and Apple Porridge

Ingredients

Oats: 160 gms

Milk: 600 ml

Apple (Grated): 1

Honey: 2-3 tablespoons

Blackberries: 100 gms

Basil Leaves for garnishing: 3-4

Procedure

Place oats and milk in a large pan over a medium heat.

Add a tiny pinch of salt and stir with a wooden spoon.

Bring to a steady simmer for 5 to 6 minutes, stirring as often as you can – if you like your porridge runnier, simply add a splash more milk

Add grated apple and most of the honey through the porridge for the last few minutes of cooking.

Squash in most of the blackberries, then serve with the remaining scattered on top and the remaining honey drizzled over.

Berry Yoghurt Parfait

Ingredients

Vanilla Nonfat Yogurt: 3 cups

Fresh Strawberries: 1 cup

Mixed Fruit Jam: 3 tsp

Fresh Blueberries And Blackberries: 1 cup

Roasted Oats: 1 cup

Procedure

Layer 1/3 cup vanilla yogurt into the bottom of a glass.

Combine jam and fresh berries.

Alternate layers of fruit and roasted oats with yogurt until glasses are filled to the top.

Chicken and Mushroom Oats Risotto

Ingredients

Oats: 1 cup

Oil: 2 spoons

Mushrooms (Sliced): ½ cup

Boneless Chicken Breast (diced & boiled): ½ cup

Peanuts: 2 tbsp

Chicken Broth: 1 cup

Ground pepper

Grated cheddar cheese: 3 tbsp

Garlic: 3-4

Basil

Procedure

Boil chicken stock in a pan, and add oats to it. Cook till the oats are softened.

In a saucepan, heat the butter over moderate heat. Add the garlic and roast it for about a minute. Then add the basil and roast for another minute.

Add peanuts and roast it. Add the mushrooms. Cook until the mushrooms turn browned, about 5 minutes. Add the chicken, 1/4 teaspoon of the salt, and the pepper. Cook until the chicken is just done, about 3 to 4 minutes.

Slowly add the oats mixture and keep cooking. Keep adding more chicken broth as the oats dry up. Continue the process for about 15 minutes on medium flame till the oats are completely soft. Add cheese at the end and mix well.

And serve it hot.
