Fly Like a Butterfly recipe by Dobaraa restaurant, Bangalore

Gin – 55 ml

Cucumber juniper

Watermelon Clarified juice 60 ml

Triple sec 15 ml

Water melon

The addition of watermelon clarified juice adds a subtle sweetness and a touch of sophistication, while a splash of triple sec introduces a hint of citrus complexity. Preparation – Add all ingredients together into the mixing glass, add ice cubes stir well then strain it into the Martian coupe glass. Top it up with Watermelon Air.

Ingredients

Basil Gin – 45 m

Calvados liquor – 25 ml

Green Apple chunks – 3 nos

Lime juice – 25 ml

Egg white optional

A sophisticated twist on the classic sour, the “Julius Sour” combines basil gin, Calvados liqueur, and fresh green apple chunks with tangy lime juice. Optionally topped with a silky egg white foam, this cocktail offers a refreshing and complex flavor profile.

Method – shaken

Garnish – butterfly blue pea dust

Preparation – Add all ingredients together in a shaker do the dry Shake, then add ice cubes and Shake well using a rolling method.

Jamun Kokum Highball recipe by Taupe, Goa

– 60ML Gin

– ⁠20ML Lime Juice

– ⁠15ML Homemade Kokum Syrup

– ⁠30 ML Fresh Jamun Juice

– ⁠Soda (Top Up)

– ⁠Taupe Chaat Masala (Half Bar Spoon)

Instructions

– In a shaker add all the ingredients leaving out the Soda.

– ⁠Shake and fine strain over ice in a tall tumbler glass

– ⁠Top up the cocktail with soda

– ⁠garnish with dried kokum

Method

1. Add the gin, Martini Extra Dry, elderflower, and olive brine salt into a mixing glass.

2. Fill the mixing glass with ice.

3. Stir the mixture well until thoroughly chilled.

4. Strain the mixture into a chilled martini glass

Spiced Honey syrup – 15 ml

Method – Muddle the Fresh fig & Shake it with ice cubes. Add the remaining ingredients & strain into an ice-filled Collins glass.
